Steven Gao on Instagram: "the julienne! a lot of you were asking how to cut different ingredients after the brunoise video (especially carrots) so here is another basic knife cut that you see all the time in recipes for all sorts or foods. a julienne is pretty simply just a thin baton/strip that is used in many dishes. you might cut an onion to make caramelized onions, carrots to go in a spring roll, potatoes for fries or hash browns, there are just so many different things that you could make.
